Over many centuries the cuisine from these parts of India has been fused with contributions from other cultures due to the invasions from many crusaders. This includes the Mughals who indisputably have singularly made the largest contribution to North Indian fare.
North India's traditional clay oven, the tandoor is considered to be the most versatile kitchen equipment in the world. It is claimed that one can not make decent bread nor savour the popular kebab and tikkas without one. Gravies and lentils cooked in a tandoor acquire a unique taste, vastly different from food cooked on an open fire. It would be no exaggeration to claim that it is the tandoor that has helped popularise Indian cuisine all over the world.
North Indian cuisine is normally cooked to varying palates and tastes, hot, medium, mild or even with no hotness at all. It is important to remember that chillies in North Indian fare were an import for South America and many dishes can be prepared without hot chillies.
